Cranberry Juice

2 cups cranberries
3 cups water
1/2 cup sugar
2 tablespoons lemon juice

Cook cranberries and water until berries are very soft. Strain through cheese cloth (do not squeeze). Boil juice with sugar for 3 minutes. Add lemon juice and chill thoroughly.

Makes 1 quart (8-1/2 cup servings).

 

Cranberry Spritzer

2 cups cranberry apple drink
1 cup white wine — chilled

Pour into glasses over ice until 2/3 full. Add club soda.


Cranberry Kir

Mix 4 parts chilled sparkling wine with 1 part chilled cranberry juice cocktail. 2-4 oz. servings for each 1 cup of liquid used.

 

Cranberry Chocolate Chai

4 Ceylon Cranberry Tea bags
2 cups cranberry juice cocktail — heated
3/4 cup sugar
1/2 cup unsweetened Dutch-process cocoa powder
8 cups milk
1 tablespoon vanilla
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
whipped cream
additional ground nutmeg
Candy canes (optional)

Pour the hot cranberry juice cocktail over tea bags in a large saucepan. Cover and let stand 3 to 5 minutes. Remove tea bags. Stir in sugar and cocoa powder. Cook and stir over medium heat just till mixture comes to boiling. Stir in milk, vanilla, cinnamon and nutmeg; heat through. Do not boil. Pour into cups. Top each serving with a dollop of whipped cream sprinkled with nutmeg. If desired, insert candy canes for stirrers.


Hot Cranberry Cider

1 gallon cranberry juice cocktail
5 cups apple juice
4 -3-inch cinnamon sticks
1 medium orange — sliced
1/2 cup cranberries — fresh or frozen

Combine cranberry juice cocktail and apple juice. Add cinnamon sticks, orange slices and cranberries. Heat to boiling over medium heat; reduce heat and simmer 10 minutes. Serve warm.
